Speicheldrüsen können als serös, schleimig oder seromukös (gemischt) klassifiziert werden.Bei serösem Sekret wird hauptsächlich Alpha-Amylase abgesondert, ein Enzym, das Stärke in Maltose und Glukose aufspaltet, während bei schleimigem Sekret hauptsächlich Muzin abgesondert wird, das als Schmiermittel dient.
